Fructooligosaccharides (FOS) from chicory root fiber are used both as a sweetening agent and as a gelatin substitute.

FOS are a natural form of soluble carbohydrates found in various vegetables, such as endives and onions. When taken orally, they are only partially absorbed, as most of them serve as a nutritional substrate for the growth of the gut’s natural bacterial flora, primarily species from the Bifidobacteria and Lactobacillus genera.
