Tocopherols are a group of fat-soluble chemical compounds of similar chemical structure (homologous compounds) with strong antioxidant properties. They have multiple physiological effects and intake by the human body in small quantities through food is essential. Tocopherols are collectively known as vitamin E and are found in vegetable oils and generally in plant foods. Tocopherols are distinguished by the letters of the Greek alphabet in: α, β, γ, δ, ε, ζ and η. The most important of these is α-tocopherol (d-alpha-tocopherol), as it is characterized by better absorption and bioavailability and with in this form the majority of clinical trials have been conducted.
